ChocoNat have created a process to work with raw cacao that mimics the world’s leading chocolate-making techniques. The traditional process called “tempering” gives chocolate its crisp, smooth texture. Our tempering process is changed only in that we refrain from heating the cacao, thus maintaining the vital nutrients and antioxidants (raw cacao has 4 to 7 times the amount of antioxidants than traditional dark chocolate) that make cacao one of the world’s most nutritious superfoods while preserving the time-honored traditions of fine chocolatiers.

Our process is unique and patented for #Choconat. The machine takes the beans and grounds them very finely (under 20µ as usally in chocolate factory) all is made and controled by a laser thermometer at low temperature under 31°C melting point. Our laboratory was controlled by the state and obtained the certifications for that! USDA CCOF ECOsert BIO more info at our brochure.

it's the first raw factory of this type in USA that produces chocolate from unfremented unroasted criollo beans,. all the others raw chooclates are processed at 118°C to 200°C because they don't have the machines we developed we can produce at low temperture 31°C so all enzymes remain. ...choconat chocolate has 7 more antioxydants than a classic dark chocolate and more than others raw chocolates! ...it's the reality!
